Will published articles in a unpublished child-category by default show when I filter {articles} on the parent-category including-child-categories="true" or will they by default NOT show (as I expect).

Yes, I tried it out, but I get mixed results:
- custom image-fields do not show (as expected)
- category:title : do show
- tags: do show
- article id: does show

Issue not resolved in Articles Anywhere v11.1.4-dev2175016

Open the Articles Anywhere system plugin and check what ignore settings are selected. Try re-saving the plugin settings.

I checked the ignore settings (Ignore Publish State = "NO") and re-saved the settings. Published articles within an unpublished category are now no longer visible (as expected). This works for me! Thank you.
But take note of the following: When I set 'Ignore Publish State = "YES"' and save this setting, published articles within an unpublished category are also no longer visible (not as expected!). This doesn't bother me at this moment, but it may be your concern or important to other users. (And I'm happy to test it when you resolve this).

Are you setting the "Ignore Publish State" on the Article level or the Category level?

I was setting it on the article-level instead of the category-level. Sorry my bad!
So the issue is resolved in Articles Anywhere v11.1.4-dev2175065
